By early April, the former Kentucky Fried Chicken location in Matthews will become home to Toyama Express.
Owner Timmy Ly is opening his second Toyama location after operating the original restaurant for the past five years in Charlotte’s University City. The business at 200 E. Matthews St. will employ at least 10 people in full and part-time positions, he said previously. Work was in full swing at the restaurant this week and Ly hopes to open by the end of March or early April.
KFC left Matthews in June 2011 after 24 years. The restaurant, owned by Laurinburg, N.C.-based Scottish Food Systems, needed a complete overhaul to satisfy its KFC franchise agreement. There wasn’t enough room at the Matthews site, company officials said. The property is owned by James and Margaret Rowan of Charlotte and managed by Mark Moffett of Georgia-based Workman & Company.
Ly said he hopes his restaurant will capture area workers in need of a quick lunch break. The business will offer drive-through service.
